I eat completely vegan now. That can be a little more challenging because you actually have to think about what you’re going to eat but it is so worth it. This a normal grocery list for me:

  • cherry tomatoes and regular tomatoes
  • baby spinach
  • cucumbers
  • carrots
  • green, red, yellow peppers
  • alfalfa sprouts
  • apples
  • natural peanut butter
  • strawberries
  • grapes
  • vegan canned chili
  • onions
  • cilantro
  • balsamic vinaigrette salad dressing
  • almonds (soooo good for you!)
  • whole wheat wraps
  • Boca Original Vegan “burgers”
  • portobello mushrooms
  • hummus
  • 100% fruit juice

I have to ask though if you would share with me how you managed to get your tummy looking so good? I have been trying hard at the gym, and although my scales are showing me lower numbers, I'm not physically noticing a difference :(

The best advice I can give you for this is to focus on WHAT you’re eating, not just the amount of calories you eat/burn. Your body will start to look substantially different if you’re eating 1200 calories of fruits/vegetables/whole grains every day as opposed to 1200 calories of junk food.

Lunch! Grilled portobello mushroom (marinated in balsamic vinaigrette) — cooked on the stove (takes about 10 minutes - EASY!) on a spinach flatbread wrap with organic jalapeno cilantro hummus, tomato, Daiya dairy-free mozzarella shreds, grilled onions, alfalfa sprouts, and looots of hot sauce ;)

I aim to do some form of cardio for 45 minutes 5-6x a week — this can be anything from the elliptical to spin class to running to hiking to playing extreme hide and go seek! I also use free weights 3-4x a week, mostly doing various forms of circuit training.
